Raw Goji Berry Brownies

When I first got into raw foods and was learning how to prepare raw recipes, one of the first things I ever tried making were these raw brownies with goji-berries. It was love at first bite, and ever since that day over two years ago, I’ve created endless variations of this classic. However, my favourite ’till this day are these super-fudgy brownies made with walnuts, dates, goji-berries and a few other ingredients.

You will need:
1 cup raw walnuts (or any other nut. You can even subsitiute for rolled oats(not raw) for a low-fat alternative)
1 cup pitted medjool dates
2 tbsp raw cacao powder
1/4 tsp vanilla powder
pinch of sea salt
3 tbsp + 2 tbsp dried, raw goji-berries

1. Place the walnuts, dates, cacao powder, vanilla and salt in a food processor and process until everything sticks together and there are no large crumbs left.
2. Add in 3 tbsp goji-berries and process for a few more seconds. Press the dough into a lined tin and let the browies sit in the refrigerator a few hours.
3. Pull the brownies out of the tin, slice them into small squares and decorate with the rest of the goji-berries before serving.
