Double Chocolate Peanut Butter Brownies

Honestly, there a few things better in the world than a rich and chewy brownie, right? Well, except from a rich and chewy brownie with peanut butter. These brownies really do have it all, they are super sweet and decadent, extremely rich, they have a soft but chewy texture, AND they’re made with lots of peanut butter. I don’t really have much else to say, so.. moving over to brownies..

Ingredients
1-layer:
1 cup cashews
2 tbsp shredded coconut
3 tbsp peanut butter
3 tbsp raw cacao powder
15 pitted medjool dates
1/3 tsp vanilla bean powder
optional: a pinch of salt

2-layer:
10 pitted medjool dates
4 large tbsp peanut butter
2 tbsp cacao powder

decoration:
cacao powder and chocolate chunks + melted chocolate

Directions:
1. Place all the ingredients for the first layer in a food processor. Process until everything is well blended and you get a “brownie” like texture. Press the dough out in a lined tin and set aside.
2. Repeat step 1 with the ingredients for the second layer. Spread this layer on top.
3. Let the brownie sit in either the freezer or the refrigerator for a few hours. Slice then into squares, decorate with cacao powder and chocolate (or maybe even some nuts and berries?) and serve. The brownies will keep for at least a week in the refrigerator, or for a few months in the freezer
