Raw Mint and Matcha Brownies
Hey guys! Today I’m back with another super simple recipe for raw brownies. The other day I was playing around in the kitchen with various recipes for a workshop I was holding over the weekend, and one of the things I ended up making were these brownies. Lately I’ve been incorporating essential oils into my recipes, and I’m absolutely loving the results. Not only does a few drops of these oils have the capacity to change the whole recipe, but they also add a whole range of benefits to the food. My personal favorites are definitely cardamom oil, rose, ocotea, tarragon, grapefruit and peppermint. In these brownies I’ve paired peppermint oil with vanilla and some matcha (green tea powder). The final product is amazingly delicious and packed with antioxidants, fibre, healthy fats ++. Peppermint is especially good for the digestive system, and has a calming yet uplifting effect. I love using peppermint oil in my tea after meals, and I always run it on my belly of my stomach is feeling upset, on my neck and shoulders if they are getting tense, or put it in my bathtub if I feel like I’m in need of an extra kick. Peppermint pairs beautifully with cacao, as I’m sure most of you have experienced many times before. I hope you love this recipe and decide to give it a try. I believe it’s a winner xx
2 cups raw nuts (I like 50/50 almonds and walnuts)
18 pitted medjool dates
3/4 cup raw cacao powder
2 tbsp coconut oil
2 tbsp coconut syrup/agave/maple (optional)
1/2 tsp vanilla bean powder
1 tsp matcha powder (more or less according to your own tastebuds)
1/3 tsp Himalayan sea salt
2 drops peppermint essential oil
1. Place the nuts in a food processor and grind into flour.
2. Add in raw cacao, vanilla powder, matcha, sea salt and peppermint oil. Process for a few seconds.
3. Finally, add in the dates, coconut oil and sweetener of your choice. Blend until everything it well mixed and sticks together.
4. Press the dough out into a lined tin with yours hands. Even out the edges and surface with a spoon. Freeze for about an hour before cutting into slices. Enjoy!
